Funny, we get shitloads up here
never used to on the more heavily fished middle grounds, but they aren't even worh a mention now. I put it down to quotas, where, a few years ack, bigger crays were a mch lower price, just getting thrown back. Not uncommon to get them were you can hardly get your hand around the carapace, quite close to town. This is a picture of a recent catch, nothing special and the biggest ones are on the bottom of the tub.that's a full size fish bin, not a little esky.

Yes, I reckon they eat well.
Not as good as whites, but as good as any other size red--as always , the secret is not to overcook.
