Yeah mate, that would be a sweet little set-up. Assuming that cast weight rating would be for a 3-6kg rated rod?? That would be fine and add some excitement on the bigger versions of fish.
For beach and rocks though, i'd be looking for something along the length, say of a 9ft rod.
Nah, don't think it'll take the fun out of it, but as mentioned below, sometimes you need the heavier rod to throw heavier lures due to conditions. I personally use my T-curve Rev 902 5-10kg 4 piece rod all the time for throwing plugs and poppers for tailor, and that is mostly because I'm on a beach or reef casting into strong onshore breezes. And also casting lures up to 80grams. Def still get some drag pulled with a 3kg + fish. But, I do prefer using my little 3-6kg outfit for targeting the same type of fish.
My favourite land based lure rod is 9'6 lateo pirate 7-35g also. I do step up to a 20-50g when the winds up just for some distance but prefer the lighter rod.
yep te heavier rod will take the fun out of it for sure im looking at fishing the same weight 3 - 6 kg for the big tailor this year caught a 6 kg tailor last winter on 15lb gear and it was a bit heavy in my opinion would love to repeat it on 10 lb this year
go with the 4-8kg with 7-35gram cast weight. that's plenty for tailor and salmon off the beach and rocks! the 5-10kg will take a lot of fun out of it i think

I did think of going heavier but that would make the rod a 5-10kg, and I really want to find the excitement in catching larger fish with a lighter rod
