Sambo quality

 Howdy all

my son and I caught these on Sunday afternoon, we took photos and let them go.  I am interested in people's thoughts on there eating quality, I have never eaten Sampson fish and have always heard that they are a mother in laws fish,  anyway they are a fantastic fighting fish tested out the light gear and was great  fun catching them.

I always heard the smaller ones are good (ok) to eat so I kept one a while back. When fillieting I thought the meat looked really nice until I noticed it had huge worms all along the spine. 

 

The worms didnt seem seem to be in the flesh, but I wasn't game enough to try and threw it all in the freezer for cray bait. Have never kept another.

I had one that size and cut all the white meat into cubes and made this www.taste.com.au/recipes/easy-yellow-fish-curry/ea27d6b9-dd80-44ba-93c0-fc6f06ab4c58. Just made sure you stir it very gently once the fish is in. Was good tucker and froze well.

Brought 1 home yesterday. It was perfect .( fish cakes). There very hit and miss..even if you can't see any trace of worms in flesh. Always take small peice from back and front both sides. Drop in cup of boiling water if it stays firm it's a go go. If it goes mushy dog food. Or cat food. My wife prefers them to any other fish( Dhues. Baldy pinks ect). Up to people's taste there firm white flesh and not a fishy tasting fish.

Good in a strong curry or something similar, big ones can be hit and miss as mentioned with parasites

Nothing wrong with a small one for a feed
If you don't end up eating I've often used them as slab bait for dermersals and mullas

 I read that they get parasites, and the larger the fish the more likely it has them.

So if youre youre going to eat them take home the smaller < 7-8kg sambos

 we have eaten them from the 5kg to the 25 kg size. they are good eating when fresh but as mentioned about the worms. they wont harm you but flesh goes mushy. pan fried with creamy lemon sauce goes down well

 Small one's very fresh in curry or marinara sauce go well, just handle carefully so as not to bruise. But mostly keep for cray bait as we get better quality fish.

 nice brine with some cajun spice sugar n salt for a few hrs , quick trip in the webber smoker and you have great tucker! I cant comment for size/ quality as i havnt caught huge amounts though , cook it right and dont expect it to taste like a KG and you may get a good chew. great work getting a session on them ! i bet it makes for good fun!i only manage the odd stray.
