just wanted to give a shoutout to mick from shorecatch.
With all the talk about squid not being available and what not I rang him up today to ask if he had any squid
yes we do have a fair bit he said
he bagged me up 24 bags of squid in a couple hours and we just picked it up
mick ill be trying hard to get to your business more often mate I really appreciate the great service

Mullet
I picked up 20kg of fresh mullet off Mick last week... The quality is awesome and they are the size of salmon!
Hopfully they can be converted into red emp in exy in 6 weeks.

Knock the sides off the mullet and use pool or butchers salt between each layer of fillets when you freeze them.
It stops the flesh coming off the skin when you thaw them and makes them tougher for the fish to get off the hook.
Can even cut them into bait sizes and do same thing if you prefer. Keep the heads and frames for burley or get Mick to run them through his mincer and add chicken oil for that bit extra.

They were already frozen when i picked them up but had only been caught 3 days prior so fresh frozen.
Would this still work after they have been defrosted? ie any defrosted bait that didnt get used that day, store it in pool salt for the next day?

Cure
Best to lightly cure the fillets in salt. As the whole mullet are vacuum sealed in 2kg lots just pull them out (for your day) to defrost on the way out. As they were fresh frozen and vacuum sealed they will defrost and look like they are fresh. Take the fillets off and any that you wont use immediately just add a bit of salt to the flesh side, stick 2 fillets together (flesh to flesh) and store back in the esky. If kept cold they will be good for days. Good luck with it all.
