can anyone please give some advice on a stella size to suit demersal jigging cheers

You need a 20,000 Stella, and a pe 4-6 alutecnos blue jigging rod.
some dude is selling the exact combo in the FS section, cheap.

For demersal jigging as Sammy has mentioned the 4000 or 5000 is ideal. If you wanted to run PE3 braid and get a good amount on the definitley the 5000 or even the 6000. As for rods The Jigging Master Three kings special UL spin is awesome. Rated PE 1.5-4 and jigs of 80-220g. These we can do for $599.
Otherwise we also have the Xzoga Taka-Si 5814 which is a bit longer and rated to PE4. Another top quality rod which we can do for $469 for fishwrecked members.
