Keep iced.  Needs to be

Mon, 2008-11-24 18:23

Keep iced.  Needs to be eaten on the same day.  Must NOT be frozen, gutted or scaled.

Put whole fish on hot coals till one side  charred, then turn over and do the same for the other side.

Lift from coals and on to plate.  Lift scales and skin off fish being careful not to break into stomach cavity.  Eat the white flesh away from the stomach.

Only worth doing if you get a big one.
