Tastes good(salmon)

 So after a lot of trial and error I have found the winning recipe 

fillet and skin salmon remove red meat

get a big hand full of fresh thyme and pull leaves off put in pestle

chop up a medium chilli put in pestle

put 2 table spoons of fish sauce and 2 table spoons of olive oil in pestle 

smash up the above ingredients 

Coat 1 centimetre fillets in flour

fry up fillets and heavily baste with above sauce and season with rock salt and pepper

dont over Cook 

Enjoy with beer (of course)

This is a hard fish to make taste good (this recipe would make most things taste good but overkill for quality fillets)

Nothing wrong with salmon, bit dry when grilling but deep fried in batter isn't too bad but when turned in to patties is where they shine along with tuna.

Hey i agree , without some extra prep there not top shelf , but as my prev post below ,  you just need to use your imagination,

I have had pinks or blackarse or some cods from up north that for whatever reason ( not handling) didnt taste that good, and yet had fresh

south coast salmon that was great!, and had them asking for more.

yeah 100% agree , salmon are a decent enough fish to chew on , if you prepare them properly.

If you dont bleed them properly or dont trim them up correctly or keep them fresh on ice etc etc , them

your wasting your time.

There are lots and lots of ways to prep them , including making great fish cakes , hot smoked after soaking in a brine,

fish mornays , and as we found out last year , very fresh salmon cut into nugget size chunks, rolled in seasoned flour  and then deep fryed in very hot

oil in a cast iron camp oven , just magic.

And yes I do possess taste buds , we enjoy reds or rubys from up north , dhus down south , so we eat quality as well , but fresh salmon on a

south coast beach , cooked on the day caught is just another different but tasty feed.

And as a poor Uni student years ago tried everything we could eat that we could harvest from the Ocean for free whilst having fun. AND this wasnt one I have ever found palatable. Just cant get it pass the tip of tongue taste buds!!

Salmon patties

When pro salmon fishing, once a week we would all take a salmon home to cook up as patties to bring back with us onto the beach the next day for dinner and taste all the new recipes and give comments,. Some were complete crap but others were fair and the odd one excellent.
They are a good fish to experiment with and don't be scared to leave the red meat in, it provides some moisture and a lot more taste.
Go for it, I want to read some of the recipes that others have tried. Mine have been on the site for years, you will have to find them, good luck with that
