Tips on cooking up Amberjack and Shark Mackeral

G'day all.
Was fishing down at the boat ramp here at Coral Bay this afternoon and someone in a fourby ute turned up and handed my sister in law's hubby 4 bags of cryovac'd fillets including Cobia, Amberjack, Shark Mackeral and shark of some description.
Have eaten Cobia recently and find it very tasty. Haven't tried Amberjack and not sure about the Shark Mackeral (the shark got handed out around the Bayview Caravan Park).
Has anyone got a good method for cooking up the Amberjack?
Is the Shark Mackeral worth keeping, or a good giveaway to backpackers :).
If the fellas that gave the fish to us are forum members, thanks a heap. They must have some good quality fillets in the freezer if they're giving these fillets away :).

amberjack imo is best just
amberjack imo is best just dusted in flour and cooked in butter. verry tasty fish, no need to add anything to it

id be giving the shark
id be giving the shark mackeral to someone who you know wont be eating it in coral bay so they cant let you know how bad it was....backpacker is a great idea.

We caught
A couple of Cobes last year but didn't bleed them. I've had them before and they were great. Must of been bled cause these ones were super strong flavoured even after the blood line was cut out.
I'd give the shark a miss, especially if it's been handed out around the park. It must of been pretty big.
Shark Mac curries.
Amberjack very thin cut pieces in flour and cooked in butter. Better than nothing

Amberjack just batter and fry up in a pan as mentioned above

I could feed you properly bled and chilled shark mack, and you wouldn't pick it from spanish.

+1 for shark Mack being
+1 for shark Mack being fine. Caught a ripper off the beach with a big twisty at Maud's Landing Coral bay (a rarity) and got ripped at the filleting table for keeping it (always a nice experience). Anyway, egg flour bread crumbs later it was good feed for the whole fam.

Shark Mack is hit and miss.
Shark Mack is hit and miss. You must bleed it and chill it and cut away the bloodlines and then fresh it either comes out lovely (like softer Spanish Mack) or it tastes like ammonia and disgusting. Someone once told me it was due to location/what they're feeding on but I don't know. Some fish is personal preference by the fish eater, but for sharkies it's mostly down to the fish and the prep. If you hate it, you probably have had an ammonia one (it makes me want to spew )

Small amberjack good, deep fried in beer batter has been good.
Shark Mac in my experience is nothing like Spanish Mac. The former has ammonia smell, soft and horrible, the latter one of my favourite fish.
