I just cut the tube open, clean, then wack it a few times ( for the big ones ) with a meat hammer. Then i score the tube with a knife ( not cutting all the way through ) in a criss cross pattern, then cut into 5cm squares.
Salt , peper, garlic , oil, chili, mixed with the bits in a bowl. straight into a very hot pan or wok for 2 minutes. Done .
The bigger the better IMO . Yeah i used to just keep the big ones for bait , but cooked up a monster 6kg one for a friend and now I cant get enough. I still keep the heads for bait, but i also cook up the 2 main shooter legs ( if i havent used them that day ) I cut them into slices like a 20 cent piece , then fry them like scallops. Try it, they are tender if you dont over cook them .
only ever eaten once had to slice it so that it wasnt that thick then scored it in criss cross patern again salt peper garlic chilli ,marinated with kiwi fruit for half an hour , red hot pan 2 minutes each side was good

How do you guys normally cook them up ? really thinly sliced ?
We normally only get the massive ones and theyre hard to cook well!
