I smoke salmon all year round down here and love it!! soak fillets in salt/sugar brine for 24 hours and then hot smoke with woodchips...twice!! Comes out awesome, bit like fish jerky...firm on the outside but soft on the inside and so so tasty!! Goes really well with a beer
a Yugo mate of mine used to cold smoke butts of beef and goat up in K town I have never tasted any thing like it was bloody delish , he also made his own grapa that was pretty dangerous
I work at BBQ's Galore in joondalup - We crank up our Bradley smoker at leats 3 times a week. Have done ribs, wings whole roast chook, cod and spaniard, drumsticks, roast lamb/beef and cashews. smoky chicken wings are by far my favourite thing to do. put in enough pucks to get an hour of smoke, then just let the heating element cook the food through. Wings and most things we do for about 2 hours. The chook we did for about 4 and a half hours and was perfectly cooked, moist and smoky. absolutely perfect.
just got back from a fishing trip where we caught a few snook and smoked em in my kipper smoker over hickory chips, was very nice. forgot to get metho tho so had to make a little fire underneath to get it going. still worked a treat! haha

Had the last of our mulloway
Had the last of our mulloway smoked a few weeks ago, definately one of my favourites.
Smoked tuna last week, that was nice, almost a buttery flavour to it.
Best way to eat some fish IMO
