Bait
Fresh mullet,the same bait I also like here in Carnarvon.Go out with the net a day or two before you are going fishing.Scale and fillet them on the beach and straight into the esky on ice.If it turns out being a bit longer before you're ready to go add more ice,do not freeze them as this causes them to fall to bits and leave you with just skin on the hook.I could be wrong but I think they lose some of their oiliness as well.If you're lucky enough to get small ones up to say 5 inches long even better as they make a whole bait without having to fillet them

reminder
Just a reminder to those of you that use smaller fish for bait that its considered as filleting at sea and you could be done for it. Also, just remember that if you bring that fish in to use the next day, it will be considered as part of your bag limit and could put you over. Also remember the size limits for those fish that you are filleting, as you could possibly get done on 3 accounts.
Cheers,
Adam

Filleting at sea rules - not all banned
Depends on the category number/risk class of the fish.
The full story:-
‘Low Risk’ (=category 3) species may be filleted or trunked at sea and the pieces landed, provided the skin is attached.
Source:- Page 11 of Recreational Fishing Guide - West Coast Region http://www.fish.wa.gov.au/sec/rec/west/index.php?0102 This guide doesn't use the category numbers any more, only the high, medium, low risk descriptions.
=====
Category three fish may be filleted or trunked at sea provided the skin is attached to the fillet/trunk. A minimum fillet length does not apply to Category three fish.
Source:- Page 3 of Recreational Fishing Guide - Gascoyne Region http://www.fish.wa.gov.au/docs/pub/GascoyneLimits/index.php?0103 This guide uses both the category numbers and description.
====
Filleting at sea IS allowed BUT there ARE minimum size limits on the fillets of category 1/highest risk fish and category 2/medium risk fish while at sea as listed in the guides. Some species and places have tighter special rules, so read the guides.
