Boil inthe bag crayfish - WTF?

Ok so it looks like boil in the bag crayfish, or some kind of dodgy processing ban circumvention but it isn't really.
Its called Sous-vide cookery, and its just me trying out a few of my xmas presents early.

Is that vaccum style?? Seen it on iron-chef etc, always wondered if it would give the flesh a funny texture. Cooking at such low temps doesn't seem right.

true, had sashimi scallops
true, had sashimi scallops the other night and they were pretty pretty good.
just imagining a rubbery texture from cooking it at such a low temp for a while, but hey by the looks of your previous posts your a much better cook than I.

shucked and eaten straight out of the shell are amazing, the only benefit for a bad shot on a prawn boat!
