It scares me baking fish, always worried about overcooking.

We had some Estuary Cod pan fried last night, and it was a bit underdone in the middle,

Made me think about oven cooking the larger fillets,

Is there a rule of thumb for baking fish ?

Baked is a little tricky but if the fish is a little overdone, the compensation is the fantastic sauce. You just have to keep an eye on it really but like cooking any meat, you must let it get back to room temp before you start cooking.

The difference between steak cooked at room temp, compared with it straight out of the fridge.

Well no comparison. I will try baking the next chunk of cod.
