Devein and seed 3 red capsicum, 1/2 a few red onion, grab some garlic and toss it all on an oven tray, drizzle a little oil over it then whack it in the oven on tray, high for 20min. Pull it out, skin the capsicum and garlic, pour the juices out into a bowl.
Next, roast a handful of blanched almonds, chilli and walnuts too if you like em.
Toss them all together and bamf with stabmixer, drizzle olive oil till happy with the consistency.
