You can really see why they're called 'pigfish' when you look at their mouths/snouts! A new 1st for me.

Mitch, whats interesting was the blackarse came up looking like a coral trout! With a light yellow-pink colour and spots. These quickly changed into orange once it died. Didn't think blackarse were a species that needed bleeding?
And as for sashimi... southern bluefin tuna are awesome! more expensive than yellowfin in japan. Give it a shot by googling it, otherwise send me a pm Jay. ;)
Maybe its an acquired taste, but after you've prepared it properly and had a bit, you wouldn't "spoil" anymore freshly caught tuna by cooking/overcooking it ;)
i always bleed al my fish .well 95% of the time anyway .realy only dont do it if the bite is hote and am to busy pulling fish into the boat .you can realy notice it if yove bleed ya catch and have missed doing one upon filleting them you will notice the colour difference especialy the non bled one ,even to thje point on which way the fish was lying in the esky.with one side [down side] being alot darker[redder] than the top side.JMHO.

Funny you mention that Mitch, was one hot bite, only lasted an hour thou. ;( We had one triple hookup and one double hookup, mainly skippy unfortunately. I was going to bleed my pinkies when I sat out a drift but thought I'd leave them.
We bled the tuna, but felt that the bottom fish were ok as they were on a pretty heavy ice slushy.
For those that are interested...
From experience, I believe it is better to let the fish 'sit' in the fridge for a few hours, at below 4 degrees or so. by doing this, the muscles will relax, and you will end up with smoother, more 'melt in your mouth' meat, which is still nice and firm.
Although there's nothing wrong with eating it immediately, or straight out of the water; from experience, the meat is usually a bit more chewy, and well... I like the 'melt in your mouth' texture.
