crap thread alert!! which do you prefer ??
went up to sandy cape the weekend just gone for a camp and beach fish.
wasn't expecting much fish wise bar a ray or two off the beach next to camp.
managed to get some bull herring on the bite later in the eve tho , and took one for breakky.
got to say , i prefer herring over tailor any day. it was fantastic , scaled and pan fried in salt and pepper and oil.

If I spent half as long fishing , as I do reading this bloody forum , I'd be twice the fisherman I am.

man I rate herring how you did it amongst the best! Including your primo white flesh bottom-dwellers!
Hard to beat fresh caught BBQd herring. At some spots down south I get everything all ready to go - all the ingredients, stove, pan, etc ready to rock. Catch a bull hezza, iki jime, scale, gut and on the BBQ less than 5 minutes later! Friggen awesome!

I was saying to a few mates the other day, even though ive got dhu, blue groper, pinky ect in the freezer i enjoyed some fresh crispy skinned herring recently and i rate it highly!
As for tailor i remember liking them as a kid but my most recent experience with them was rather average.

Whole
Straight out of the water and on to the plate, no bleeding, gutting or scaling. The guts shrivel up in to a ball and the scales start to lift off when its cooked. Its one of the few ways I'll eat them.
Tailor are meant for others to enjoy catching so I leave them to swim away after de hooking. Missus doesn't like me letting all of them go but what she doesn't know won't hurt her.

Yuck hate herring or tailor
I'm afraid you can all enjoy them. But do love roll mops, smoked mackerel, smoked salmon. Old fart reckons I'm weird, you don't like fresh herring or tailor yet you'll eat rollmops, yummo I say, must remember to buy a jar of rollmops, lips licking hahahah Have never tried smoked herring or tailor, but I think I'd like them smoked, as most smoked fish is delicious.

rollmops
a rollmop is a raw herring fillet, rolled up and pickled in vinegar and spices. The vinegar cooks the flesh. They originate from Norway and other Scandanavian countries.

From my limited experience (
From my limited experience ( well with tailor, have caught a fair few hezzas over the years) you can cook herring just about any old way and they taste pretty good. Crispy skin on bb best, but you can really overtook them and they are still OK.
Tailor on the other hand require heaps more care. I caught and cooked 3 over the past two weeks, the first was just ok and the second was terrible and dry. Just about gave up but the third fish was cooked about an hour after capture and I was really careful to JUST cook it. In fact, I tool it off the BBQ a bit rare and let the final bit of cooking happen as I served it.
WOW is all I can say. Moist, delicate and delicious. Honestly, you would not think it was the same fish.
Tailor is a bit fishy, which some people don't like, but I rate it up there with dolphin fish if cooked properly.
