Crayfish recipes

with all this talk of how many crays everyone is catching thought I would put up a post how to you prepare your crays some of the ways I have done in the past

Steamed with garlic and onion

BBQ with lemon pepper

Sashimi with soy and wasabi

 

Anybody else out there have any recipes they would care to share considering we do have a couple of chiefs on here maybe they will add their bit

 Popcorn crayfish.

Screw tails, place in freezer for approx 1hr, ripe flesh out of tail. Crumb and deep fry.

about 35 years ago i was still in the SMQ while working for Hamersley , they promised us a big feed of crays for xmas , the bloody chief cook caused a riot when he battered and deep fried about 300 crays tails, ffeefing idiot he left town shortly after that and was lucky to be still alive

 Yep I'm with Notorious on the BBQ with garlic butter and a squeeze of lime juice. Moved my pots out wider this morning so hopefully get a few as this moon disappears.

Best way has to be split green and soaked in butter, chilli and garlic.

 

Over on the Weber for a few minutes ( not any BBQ has to be a Weber, dont ask why it just does )

 I've been doing ours pickled

 I've been doing ours pickled with warm vinegar. Then add boiled water onions chillies black pepper corns and put in fridge in a large jar topped with veggie oil to seal. Boil cray for 8 minutes then tail and cut into rings as big as you like. Keeps very firm and great straight out of fridge.

 +2 for this.. But I reckon you are boiling them for way too long..

pickling is a form of cooking so no need to boil..

I usually boil for 2 mins only and that's only so the meat pulls away from the shell easier, not to cook..

Garlic/Herb/Chilli Butter - add ginger if you want.

Live Crays, cut in half shell side down to start on grill side of BBQ and baste with the butter until nearly cooked, flip to get charring, one last baste and perfection

Popcorn crays are awesome

Gruyere cheese grated onto the top of some bbq tails marinated in garlic oil are tasty also

Or steamed / boiled in a crusty salad roll with good mayo

 Lunch today very good. Cut tails into medium size chunks, squeeze of lemon juice over the chunks then crumbed in saltNpepa crumbing mix n deep fried. Bloody good for something different, but still defiantly can't go past the garlic butter on the BBQ.
