 very nice John. Never seem to see dhuies getting baked whole. We had fresh dhuie fillets for tea too, but nothing that fancy.

It will be coral trout and puka puka for you pretty soon though.

Any issue with eating coral trout over there with Cigatera? I assume red bass is a definate no no?

 there is a few isloated areas with Cigutera near Ono but not in the usual areas you'll be fishing. Puka Puka is the local name for the rusty jobfish? Daz knows its common australian name, not quite trout but very tasty when cooked like they do at Ono. If I wasn't in Exmouth I'd be a little jealous.

Ron, the side dish is actually potato, onion and tomato slices bakedin the same dish as the fish, with some balsamic, garlic, lemon juice, a bit of tomato paste and a few cinemon sticks....unusual combo but turned out an absolute treat. Hence, we really just has fancy chips with the dhu.....

 

Dhuie has cavity filled with mix of butter, lemon, onion and garlic. 

 

And Sam, I may be wearing the apron, but you'll be wearing the skirt...at least as far as Daz is concerned!
