If you are heading to
If you are heading to Scotland (my home country!) then a days fly-fishing for Salmon and Trout is a must! Loads of websites but this is a good start: http://www.fishing-scotland.net/ relatively cheap to hire a Gillie (guide) for the day. Royal Deeside would be a good place to go. I heard there is also decent game fishing in the Adriatic mainly targeting Bluefin Tuna, charters run out of Montengro and Croatia if you are down that way. If you are in Spain then try some fishing on the Ebro for giant Catfish - I saw Jeremy Wade doing this on 'river monsters' looked like fun!

I don't have any personal
I don't have any personal experience with these guys, but looks like a well setup charter with fair rates. http://www.profishingspain.com/
The mediterranean and adriatic indeed offer bluefin fishing as well as amberjack, dorado and a queenie-like fish called palometa. Due to heavy pressure, fishing this sea is very hit and miss. A charter would be your best chance.
Ireland/Scotland offer some great fishing as well. Flyfishing like robert said, but also hitting the big loughs for northern pike is an amazing fishery.
France offers some great oportunities as well. Rivers such as the rhone and seine are renowned for their enormous catfish and the big lakes hold monster pike as well.
Have fun!

Europe Fishing
Spain for catfish - river Ebro and the like. There are plenty of them and great sport fish. Similarly so Carp in France and Spain - though its less sporting and more of a long slog.
Plenty of surf and rock fishing to be had in and off the UK mainland and most of the north and West coasts of Europe - northern france, spain, portugal - you will get anything from cod to tope (small sharks) dogfish (shark family) to whiting. happy to provide more information in a PM if thats the plan rather than dump it all on here when not of use.
Scandinavia (particularly Norway and Sweden)- beautiful at this time of year, a lot more afordable than it used to be and great land based fishing but you will need to be able to cast, and Im talking 100m minimum.
No particular charters to recommend but its a case of horses for courses - you can go handlining for mackerel, trolling for pelagics, deep sea for - well what ever you catch?!
My other recommendation would be to take some extra cash and top up on some decent surf gear. If I recall correctly you were after a good long cast spin reel - you will get some amazing bargains over there and VAT free (UK equivalent of GST - 20% goods tax). The quality and range of surf gear available is outstanding by comparison, Im happy to put you in touch with some people that will sort you out with the right stuff.
Drop me a PM if you want.

Thanks grey heads 1, I'm in Germany at the moment and have not had a minute to spare so far. It looks like we are going to be spending a week in Paris so it looks like that's going to be my best bet to wet a line. Cheers for all that info

Switzerland
So after looking around and doing my research I have booked a day fly fishing high in the Swiss alps with Pascal Zeller from upstream fly fishing. Although the fish don't look huge how often do you go on a private guided fishing tour in the Swiss alps. here is the website if anyone wants to have a look

So I went out for a day in a fast flowing stream with pascal. Caught heaps of little brownies on fly. You had to be quick and get the fly in exactly the right spot or else the current would drag your fly away. Great day.
