Freezing mannas

Anybody had experiece freezing blue mannas, raw or cooked?

Hi Tim-O,
I have cooked, picked and frozen just the meat. We cryovaced this and it came out beautifully. Haven't done it with whole crabs though.

yep
done the exact same, cooked, peeled, drained the meat (juices build up a bit), then cryovaced.
have eaten it 10 months later, and still as good as it was the day we vac packed it.

Will let you now soon tim. I cleaned one raw on the weekend and froze it to find out how they defrost and cook up.

A good mate of mine is a crabbing guru and caught them commercially some time ago but still catches them almost daily. He has really helped me as it was not my thing, I prefer out wide chasing the big stuff. Any way he has told me the best way to feeze them is raw, cleaned, halved, then in a bag and then filled with water to form a crab ice block. Have tried it with 6 crabs and plan to thaw them and have them saturday nite. Will post how they come out.

Cleaned -halved by far the best , once cooked i found hard to get to the flesh off & mushy too... JMO
