Leatherjackets as grub

 I have skinned and eaten some before and thought the were pretty darn good. What have everyones else experience been with these fish as dinner.

 I have skinned a few and reckon they are very tasty, served some up crumbed at my sons birthday and even the

people who don't normally eat fish devoured it and liked it. I reckon the extra work skinning them turns people off eating them.

too much hard work, for the size of a fillet you get out of them its just not worth it IMO, but they do taste good

 The skinning does put most peple off, but I can usually skin both sides in about 30 seconds, good knife and a pair of pliers, use to eat tonnes of them as a kid.

 Ignore that, I just looked it up on the fish id and what we catch are the six spined leatherjacket. Might have to keep a couple next time.

Certain times of the year we would get six spined while fishing for whitting in Cockburn sound. Skinned and baked in the oven i would eat them no worries. But i filleted a heap one day, floured them and fried in a pan. They werent very nice and i always skin and bake now.

Easy as to skin and clean

Just cut vertically immediately behind the spine for about half way then rip the rest and it will take the guts with it in one clean motion.  As for the skin it comes off in one piece and you sure as hell do not need pliers, simply tease your finger under the edge of the skin of your now cleaned fish at the thickest point, grip edge between thumb and finger and pull toward the tail and it comes off like a glove in one piece - you can then cook the fish whole although the blue green bones put some people off or fillet = great for kids as boneless in fillet form

 Chinaman leather jacket i think there called .the big yellow  one's  are shocking to eat mushy yellow  flesh in them. The inshore ones are very nice but not much off thrm

Most of the small species are delicious to eat and easy to skin...the offshore species ( chinaman leatherjackets) both red and yellow are shocking to eat !!!
