shark fillet

maybe a bit of a blonde question but how do you get rid of the amonia smell from the shark fillets? i bled it fined it and tailed it straight away but still got the smell?

I bag and freeze it. Then when my free loading mates come arround asking for fish I give then that and tell them its snapper or rankin or something like that..

They all tell me it was good Tongue out

If you want to eat it fresh, i soak my fillets in milk for about half to 1 hour before i cook em up seems to work well.
