shark fillet

maybe a bit of a blonde question but how do you get rid of the amonia smell from the shark fillets? i bled it fined it and tailed it straight away but still got the smell?

Yes the best way to eat shark
as mako said in the freezer for a couple of weeks then thaw and eat

I never had a problem with ammonia
I bag and freeze it. Then when my free loading mates come arround asking for fish I give then that and tell them its snapper or rankin or something like that..
They all tell me it was good

The milk works even fresh water just soak for half hour before you cook ,

If you want to eat it fresh,
If you want to eat it fresh, i soak my fillets in milk for about half to 1 hour before i cook em up seems to work well.
