Everyone is different and it often depends on the plastic you are using. The best tip I could give you is to mix it up and find what is working on the day.

With jerkshads, go for the 'twitch twitch sink' action. The other lads might have something different that works for them but I find that too be good. I also tend to make second twitch more powerful than the first, I think thats more of a habit but it seems to work.
Paddletails are a bit different as the plastic imparts tail action all by itself! Often with paddletails you get hit on the drop as that tail goes nuts. When fishing the bottom with them its a sink and long, slow twitch of the rod. In saying that, paddletails arent my first choice but I know a few guys who swear by them and I know chrisp goes to his paddletail collection more often than not! If your going to give paddletails a go, give the Mcarthy ones a whirl.

Another thing you want to make sure of is that you have some nice lighter gear that is going to allow you to do all this. Your average bottom bouncing stroker wont suffice.

If you dont have the gear just dropshot some plastics on your bottom rig droppers. A popular plastic for this is the Powerbait grubs but I reckon the Mcarthys would also work awesome.

Yer lucanus jigs work a treat, and so do the old white bucktail jigs. Usuaully with those two all you have to do is lift the lure off the bottom and then let it drop, then lift again.
