sounds like your battery is knackered. Or not charged.

Agree
For sure looks like low power from a flat battery.
Have you also checked any fuses/breakers?

Make sure you have a common earth from the battery. Run all your earths back to that

Negative wire
Alot of old boats tend to use very small accessory wires. Make sure you use appropriate size wiring. Also, I am amazed at the number of boats that use a very small negative wire from battery to switch. It's best to use similiar size wire to positive wire.
Cable size: 8 b&s should be great. Usually rated at 80amps or so. Make sure it's tinned.
Edit: oops, just re-read stevo81's reply. Exactly what he said

As above sounds like low
As above sounds like low voltage. Check battery or even better get a new one if u don't know its history. Is your new switch panel fed with the correct sized +/- cables from good connections on the battery? If so, then run your light/stereo/sounder circuits from there with correct sized fuses.

Sounds like you are getting
Sounds like you are getting volt drop due to poor battery power, poor connection (high resistance joint) or small surface area of aux cable. Mandurah battery wholesalers do fair priced "all rounder" batteries that are completely sealed and have reserve charge to run an engel for a few days. an excellent choice IMO. about 240 each from memory
