Yummy Gummy!

Went down to my local mulla haunt for a cast tonight, as being the only night this week I was free.

Not much action, really nice calming night. After a couple of hours managed to get a hit, and feeling headshakes thought it might be a small mulla.
I was surprised to see this hit the beach. 1.25m and 7kg
Bonus I reckon! I rank them over most fish on the plate.

Tue, 2011-05-24 18:42

We used to catch heaps of gummies back over east around Warrnambool and Portland i rate them as one of the best eating fish goin around, i love em!! most of the time we'd just knock the fillets off, skin it and cut them up into meal size portions and share em around. I always get a bowl of plain flour and add a bit of salt and pepper or what ever spices ya into and cover the fillet in the flour, then have a bowl of egg mixed up with lemon juice, cover the flilet in the egg mix and straight into a screaming hot pan with about 5mm of olive oil... My mouth is watering now!! haha

You can also cut them up into sharks steaks. gut the fish into the ocean (good burley too) and get it straight onto ice, once ya get home let the fish set hard and cut it into inch thick steaks with a CLEAN wood saw. Cut straight through the back bone and once you fry them up you can just pop the bone out and get into it.

Enjoy ya feed!

I must have done something

Wed, 2011-05-25 01:03

I must have done something wrong with mine.  Pulled up to side of boat whatcked with small wooden bat, got in boat cut neck waitied 5 mins to bleed out then gutted and put into ice.  Came home filleted and skinned cooked in some alfoil on the BBQ unwrapped the foil smelt like cats piss bit off putting.  Froze the rest of the fillets havn't taken any out for a while.

Sharks

Wed, 2011-05-25 08:08

I cut the back of the neck, there's two main arteries that run either side of the backbone. Then I cut all the fins off and sometimes the tail (depending on how heavy it is, as it helps to hold). Then hold it up by tail vertical for a while and let gravity work its magic. If there's salt water use it as it will stop the blood from clotting. I generally don't kill the shark until its bled out enough. But i guess its how humane you are as the heart helps the flow IMO. Then as soon as i feel its done enough, I cut the head off and any remaining fins, gut n gill it immediately.

This one, had almost no ammonia smell and no blood on the flesh. Pretty sure its gonna be top notch, yet to try it.  Most of the ammonia smell i reckon comes from the guts n gills. If you leave it too long...then it spoils the fish. Even as little as 10 mins can make it smell bad i've noticed. If you left the head on and only gutted it then that was your problem. or Did the fillets seem a bit bloody?

Gotta be on the ball with sharks n know what your doing otherwise its a waste. I question why people kill sharks if they don't know how to prepare them (ego perhaps?), then they say they taste terrible. If you don't know, release please! (or give em to me if im fishing with ya haha) Gummy I rank in my top few fish, i'd even go to lengths to say it was better than dhu (i'm gonna get smashed for that comment haha), its not like other sharks.

i dont think you will get shot for your comment about shark over dhuie. i will go shark over dhuie any day.

just a point of interest that hasnt been mentioned yet, shark will taste better after being frozen and thawed for some reason, im not saying you dont eat it fresh as i have eaten it fresh and frozen.

As far as prep after catch, gut asap and remove the brown line that runs along the spine, removing the head i have found doesnt make any diff but each to their own.

BTW , nice lb shark , gunna taste great

Mabe school sharks

Fri, 2011-05-27 21:23

Some school sharks can look like gummy's. The way i check, is stick a pair of pliers in its mouth for teeth. ( not your finger  lol )

No teeth meens it's a gummy. There are so many types of shark's it can be hard to identify all of them.

I'm no expert tho, someone else might know more about simular looking sharks.
