Go pro all the way mate. Get the eye of mine housing and you will get documentry spec quality underwater.
These are just a couple. Original quality off the go pro is even better....
Make sure you change it to 720p or 1080p to see it in all its glory... http://youtu.be/1icCgf9-9_w

mounts for go pro
what kind of mounts are available ,I have thought about getting one but only saw handle bar mounts for bikes and for bike helmets but I would like one on a strap like you get with a head light.

Chest mount and head mount
Chest mount and head mount are good for fishing and the handlebar mount can be used to make a pole cam. Just a warning to everyone who has them the lenses scratch very easily especially considering they stick out of the cam so be careful when they're out of the housing. I just bought a polarizing filter aswell from eBay for pretty cheap and it makes a fair difference for fishing footage.

The polarizing filter reduces
The polarizing filter reduces the effects of the scratch a fair bit but there's still a slight blurry patch.

Where to buy, what to pay,
Where to buy, what to pay, for boating, fishing and mounting it on a pole, to film underwater, the fish being caught!
Any info would be appreciated.
Or are there other , better, camera's suitable & available like the Nikon AW100 or Panasonic FT10 etc.
Nikon seems tohave a lot of goodies.

You're comparing totally
You're comparing totally different styles of camera there. The gopro and contour are more of an action and point of view style camera with no display screen where as the panasonics, olympus and nikon cameras are waterproof point and shoot cameras with display screens and a much larger profile. For mounting on poles, gaffs, rods and almost everything else, even use as a towcam, I'd go the gopro. For your regular style photos like holiday snaps, or of a catch I'd go the point and shoot cameras. Not to say you can't use one camera style for just action or one for happy snaps its just that one is more suited for those things than another.
Realy depends what you want to use it for!

The price of a Nikon AW100 is from $300+ and a Panasonic $210+.
GpPro HD sems to be $299
This is my question to try to determine what is better value for a waterproof video/stills recording boat camera.
All oppinions are welcome as I think there are a lot of people contemplating getting these sometime soon

Main differences are the
Main differences are the mounts and display screen. you asked what would be most suitable out on the boat and I'll say gopro by a long shot. You could even loop it in your patternoster, drop it down, record what's down there, bring it up, watch the recording on a laptop the rig to suit what was down there.
The possibilities are pretty much endless when it comes to gopro
