Does anyone have a recipe for pickled/marinated occy they swear by?
I've been searching but not having much joy. One including a couple of chillies would be perfect!!

boil the occy for about
boil the occy for about 1.5hr, fry up some onion, garlic and chillies in olive oil.
chop occy up add three types of vinger (white, brown and red wine) and alittle pasley with the onion, garlic and chillies.

Good Occy Recipe...
Got this recipe from a forum a few years back. Danobigfish and his old man got a taste (2 jars!) on an overnighter in the river.
Freeze and defrost occy first - then you don't have to tenderise (i.e. smash it with a bat).
This is enough for a few kg of occy.
Make up the pickling liquid;
4 cups water,
2 cups good white vinegar (rice wine is good),
As much chilli as you like,
5 large sliced garlic cloves,
2 teaspoons salt,
12 peppercorns,
4 tablespoons sugar,
2 bay leaves,
(optianl spices)
1 tied bunch coriander,
1 tied bunch marjoram.
Put everything in saucepan, bring to boil, lower heat, cover and cook for 1 hour.
Remove from heat, cool. Strain liquid.
Bring pickling liquid to the boil, add occy and simmer for about 10 minutes. Let it cool (leaving occy in the mixture) pack in jars with the liquid and refrigerate.
Enjoy.
