Wash them well before you commence.

Ensure you remove the leaves. Stalks not really a problem. 

 

 

Also with this method remember to calculate the brine on 1litre per kg of olives.  Also make sure its well covered (with the slightest hole to allow gas to escape.

At the brine stage I chuck in there (this is for 10kg olives) 10 bay leaves 10 cloves of garlic (just cut in halves).

 

 

Also its important you do change the water completely each day otherwise the mould will set it or the olives will go off.

best way to know like the old timers if you got enough salt

 another tip for knowing if you got enough salt in your brine as used by my mum and dad ,is placing a raw egg in the brine for your olives,if it breaks the surface your brine is ready for your olives and do what michael and eric do aswel,this is the tradititional sicilian method for your brine....................
