Smoking fish

Hi all, We just brought our first fish smoker, and need some clues on recipies for brines / and how long to soak fillets, and smoking times. we tasted smoked spanish macks and were hooked. off to Exi in April.

Brine Recipe

Heaps of cooking salt mate. Enough so you can float a potato in it. Then add a handful of brown sugar. Soak meat in brine for at least 2 hours. I try to do it overnight. make sure you dry the meat off after binining. Wet meat will steam. Lightly brush the meat with olive oil and then smoke. Fish fillets take 8 minutes. Leave the lid on for 5-10 minutes after smoking and then you are done! Enjoy.

I never salt the fish for more than one hour or you may as well be eating salt cakes.

I dry the fish off after the brine using a fan.

We use hickory, mesquite or scribblygum chips.   Soak your fillets for an hour in brown sugar/salt mix.  Pat  'em dry.  Now brush 'em lightly with (genuine) maple syrup.

Don't bother to scale your fish.  The skin peels off a little more easily with scales left on.  Lemon juice is a must, once they're smoked.

Refrigerated, smoked salmon, herring, tailor and skippy are even better for lunch the next day...

Where does that come from?? I have found Hickory to be a bit strong but it's all in the personal taste. I have been using Olive chips and they have a great flavour. A bit of a peppery taste. Agree with the next day comment. Cold smoked fish makes great beer food. I used to wrap up a heap of fillets in news paper and take them down the pub. They would be gone in minutes!

 I have just bought a smoker, so hopefully going to catch a salmon and some herring this weekend to test it out.

How long does the fish last once its smoked? Is it something that needs to be eaten same day?

Is mullet a decent fish to smoke? I was surprised yesterday when i caught a couple fishing off a groyne in bunbury off prawn. I assumed they were vegetarian.

Mate mullet taste great smoked,herring go good on the fang as well. I bought a cheap smoker around 6 mths ago and now whenever a skippy comes over the side its kept for sushi and smoker after the boat is cleaned at the end of the day. I have mixed honey, tomato sauce, ginger and soy together for a brine,just make a mix dip the fish in it ,let it drain for a bit then into the smkoker for 15 mins. I scale the fish and reckon the taste of the skin is great as it seems to hold extra taste in. Havent left it over night yet as it seems to all get eaten fresh that day. Cant beat it.

Smoked Salmon

 Went down to the warren over the weekend and caught myself a salmon.

First time i have used the smoker and am VERY impressed with the smoked salmon.

How long does the fish last in the fridge once it is smoked. 1 day, 2 days 1 week?

I have had a bit of a search and every answer i read was it hasnt lasted longer than a day due to consumption.
