What time of the year does everyone tend to get their best catches
and what depth do people usually fish

Warmer water...
...equals pelagics. The warmest water of the year off metro area occurs March-May, even into June, and this is when we have the greatest numbers of mackerel/tuna/dolphinfish/YTK's. It also triggers the spawning time for salmon which require the warmer temps to breed. So these months are the best time of the year to chase these sorts of fish.
I've found the fishing in the Peel estuary system fires right up from late summer straight through winter and into spring for salmon trout/herring/skippy, and the tailor, as they are elsewhere, are best chased there in the summer. Of course, the big greenbacks that hang out on the offshore reefs are there all the time.
Snapper fishing on the Five Fathom Bank is good throughout the summer, bottom fishing out wide for dhufish/blackass/queenies/baldies is good the year round, probably because they are resident fish which don't move around much and the water temp on the bottom doesn't fluctuate as much as near the surface.
Oh, and my best times to get squid and kgs in the sound are from now and right through winter.
