preparing shark and suggested recipes

hi all
as the shark out of my freezer is defrosting on the kitchen sink
i am looking for some suggstions on a decent way to prepare and cook shark
i have heard of soaking in milk for an hour or so before cooking but have never tried it
any suggestions or an old school recipe would be good?

Batter
Whack it in flour, dip it in batter and into the deep fryer.
Tried the soak it in milk before and found it was a waste of good milk

Soak overnight in milk if ammonia smell still there after freezing , best deep fried fish and chip style , noah doesnt lend itself to use in curries etc as it doesnt absoorb sauce or flavours in it

Cleaning
If you clean the shark as soon as it comes out of the water there will be no ammonia in it, especially the brown strip along its spine

pretty well all my fish I egg and bread crumb. (kids hmmm)
if there are no kids I get a bit more creative.....
but for shark the go is a good beer batter. (just google...but I use beer and soda water)
always comes up best
