Heaps on nice skips, half a dozen nice snook all happy to eat #bigjohns micro bucktails. Crewie had a fast fish on but it buried him in the reef, run for home when a front was heading for us. Pleasant  arfo out, neighours will be happy.

i reckon they are great

i reckon they are great eating fresh. they fillet extremely well, and easy to skin, then just peel the meat of the dark midline in the centre and have very little issues wiht bones. havent tried freezing yet...

I keep the small ones for

Tue, 2019-07-09 14:49

I keep the small ones for bait, and the bigger ones for eating as my process isn't worth it for the little ones.

Fillet, skin, then cut a strip out of the middle of each fillet to remove the pin bones and get rid of the blood line. You then have 4 pieces of bone free white meat from each fish. Only worth it on the bigger specimens. The waste goes into my burley pot for next time.

Dust the fillet in flour and lemon pepper, then shallow fry. The whole family love it.
