ok, I will make fish head soup. So folks, this is how it's done.
First you need a good sized fish head, preferably one with alot of meat on it.
Remove all the scales. On a fish like a dhuie, it's a real pain, so pinky heads are better, but I didn't have any.
A scaler like this one works very well. Wish I bought a spare when I was in Japan.
Next prepare Lots of garlic, onions, leeks, carrot, ginger, some pumkin and any other veg you fancy, and have it ready.
I fry the garlic, onions and ginger till very fragrant, in lots of oil first,
Take it out when brown, then
Fry rest of the veg. This is done to flavor the oil for the next step.
Next use the oil to fry the fish head till the skin is crispy. Don't
be half baked here or the whole dish will end up smelling fishy!
This is usually a messy job, so a simple outdoor cooking station like this
helps keep peace in the house.
When the skin is crispy, pour in enough water to cover 3/4 of the fish head, pour in the veg, season with soy sauce, braggs aminos, miso paste, 1 glass of brandy (1/2 is for drinking while cooking!), salt and what ever strikes your fancy. Simmer till it's cooked thru and serve hot.
Yes, my children will eat fish eyes.

I'm friends with alot of Africans who tell me the head is the best part. Must admit that I've never tried anything on the head other than the cheeks.
This may sound stupid, but other than the eyes and the cheeks what else is there to eat?
I guess the two main reasons I've never tried it are that I didn't know how to prepare it and didn't know which bits to eat once I had. Thanks for taking care of the first part!

Ok next fish I'll try souping the head! Otto probably eats fish eyes, but then he isn't terribly discriminatory. He also eats pebbles, the occasional leaf, bugs and probably a slow-moving slink or two!

never thought either to cook the heads, we save them for the craypot, strung up with some wire dangling there to entice the crays to stay till we say hello in the morning. But I have eaten snapper livers they are delicious very rich but nice, also dhuie intestines at the time didn't know (well I didn't want to know) and they were yummmy. I think my favourite would be sand whiting roe, Dad cooked them up in seasoned flour and cooked in butter, had to fight the siamese cat for them. We have yugoslave friends and I've tried their brodet (fish soup) but found the liquid was yummy but the fish yuck to oily for me, like eating a mouth full of cod liver oil.
Your cooking station is excellent, friends in Broome have the same set up, as Hans says to keep you know who happy and I don't have to paint the kitchen every two years, as he loves cooking in the wok, does all the roasts outside under the verandah as well.

If you intend to eat the head, try to bleed the fish when you catch it.
The top of the head behind the eye, on most fish, has heaps of meat.
The inside of the mouth of pinkies and coral trouts, the slippery bits when cooked, are really nice.
It's really hard to scale fish heads, but if you take some time and care the rewards are worth it.
The eyes take some getting used to and best eaten if the fish is not frozen.
