Seafood sauces

I'm contemplating trying a new sauce over some black bum fillets - I have a cracking Capers and Horseradish Sauce, but am keen for some alternatives - Does anyone have a favorite sauce they'd be willing to share? It doesn't have to be a white one... or a fish one for that matter... (I'll just improvise)


Sumac crusted Dhufish w/asparagus

So I have had some lying around and was wondering what to do with it. This is so easy you won't believe it.

Turn oven on to 200 C and preheat glass tray.

Preboil asparagus lightly in a shallow pan.

Rub room-temp fish down with olive oil, give a heavy coating of sumac, and then fry for a few minutes a side.

Pop straight into oven for 10min .

While its in the oven griddle the asparagus untill cooked.

Plate and serve with a little lemon on the side.


CHILLI GARLIC PRAWNS AND SNAPPER

hey guys and gals made a nice recipe last night for prawns and snapper

 7 or 8 king prawns

 nice fillet of snapper

 1 teaspoon chilli (or two if u like it hot i had four and it was nice lol )

2 teaspoon crushed garlic

couple basil leaves

half a lemon

little bit of olive oil

salt pepper

than marinate it them for about an hour in the fridge

then walla lol it is beautiful


Cooking Tuna

Any one have any tips on cooking and preparing Tuna. I'm not into eating them raw ! Can they be filetted and cooked as normal or are they a throw back job ?


Chilli, Garlic, Pineapple and mango Steamed Dhufish.

Grab one of those pre made fruit salad tubs, some masterfoods crushed chilli and garlic & shove it all in a bit of foil with some dhuie fillet.

Chuck the juice and all from the fruit salad in too.

Bake in oven on 150 celsius for about 20 mins and then eat it.

Will have pics after dinner if it turns out ok....lol only 10 minutes and it's ready.

Sambo sashimi

OK... we all know the sambo as being regarded the neighbour's fish.... so having caught an 18kg specimen last week handed a slab of the fish over to the neighbour who happens to be a Japanese chef !

About half an hour later he passed back over the fence a plate of prepared sambo sashimi, complete with soy, wasabi and lemon.

Just put in the fridge to chill for about an hour was his suggestion, then mix up the soy, wasabi and lemon.

 

The sambo has basically no smell and is very paletable, with a firm texture when dipped in the sauce.

Shared the sashimi with my neighbour on the other side who also fishes and sceptical about the sambo - he has now changed his mind and has vowed to bring in the occasional sambo to do the same, with the rest for use in curry's !

KG Recipe

Always gave my mum my KG's, as I prefer a nice sized Pinky or Dhuey fillet and am generally lucky enough to get one... but yesterday was a different story... only able to take a decent sized KG home... so Mum's going hungry...

... but what do I do? Fillet it? Bake it whole? Crumb it?

There's no recipe on here either... and I know many of you guys are KG crazy, so there must be some cracker recipes out there....

Help on gardies

Does anyone know a recipe for these suckers???

Been fishing lately, and have thrown a few gardies back.

I don't know  of any recipies for them.

Any ideas would be great...

Pickled Octopus

Does anyone have a good recipe for pickiling octopus? I know that some shops like Charlies in Perth do it very well. Just wondering if anyone has a recipe that they would like to share?

Grilled Spicy Shark

250 gms shark fillets (3/4 thick)
1 teaspoon dried basil
1/3 cup lemon juice
1 clove garlic, minced
1/4 cup chopped parsley
2 tablespoon chilli sauce
1 tablespoon soy sauce
Place shark fillets in plastic bag.
Add lemon juice,parsley, basil, garlic, chili sauce and soy sauce.
Close top of bag and refrigerate for at least one hour, but not longer than 8 hours.
Remove shark from bag and save marinade. Place shark on rack of pre-heated grill about
3 inches from heat and grill for 3-5 minutes. Turn fillets over,
brush top with marinade and grill an additional 5-8 minutes until
fish flakes or is done to taste. Pan fry rest of marinade until it's
reduced by half and pour over fillets when serving.

Baked Snapper with Hearty Winter Vegies

Tried this last night, fantastic, a winner for the entire family!

1 snapper (1.5kg)
Light Olive Oil
Salt & Pepper
Fennel seeds
1 lemon (sliced)
2 leeks (1/2'd & sliced 2cm)
3 carrots (cubed)
3 desiree potates (cubed)
1 can crushed tomatoes (juice drained)
1/2c white wine

Preheat oven 200C
Oil baking dish (big enough to hold snapper)
on top side of snapper make 3 scores through skin
brush snapper with oil, dust with salt, pepper & fennel seeds inside & out
cut enough slices of lemon into 1/4 to put inside cuts
place rest of lemon slices inside gut cavity
Fry leeks & carrots until just starting to turn tender
Bring potatoes to boil from cold water & boil until just starting to turn tender
Put snapper in pan, spread carrot & leek mix around outside
spread potatoe over the top of carrot, leek, mix
mix crushed tomatoes & wine together really well & pour over vegetables
Cover with foil & bake for 15mins
Remove foil & bake further 10mins until potatoes are crisp, other veges are
soft & juicy & the fish flesh is opaque to bone


Herring recipe

Made a great Thai style fish curry the other night using herring. One of the nicest curries I've had, and I was in Thailand eating their food in December for 2 weeks, so it's pretty good. And healthy too.

Serves 2

Ingredients

Olive Oil, 1 teaspoon
1 onion, quartered
4 herring, filleted
Green curry paste, 2 full tablespoons
coconut milk, half a can
eggplant, 1 cup diced (zuccini would work here too)
Bok Choy, 1 cup chopped
broccoli, 3/4 cup chopped
Fish sauce, 1 teapoon
brown sugar, 1 teaspoon
coriander, 2 teaspoons chopped
rice, 1 cup cooked

Preparation

1. Heat the oil in a large pan and saute onion over medium heat until browned.

2. Add herring fillets and cook for 3 minutes. Add curry paste and stir for a further munute or until fragrant.

3. Add the coconut milk and increase heat to high.

4. Bring to boil. Add veges, fish sauce and brown sugar.

5. Reduce heat, add coriander and simmer covered for 5 minutes, or until veges are cooked.

6. Serve rice topped with curry.


Beef Jerky

Beef Jerky is currently in the oven, first time ive made it using some advice from guys on the overlander forum.

bits of topside 6mm thick,with a toothpick through them and hang them on a rack.

salt, sweet chili and soy marinade, oven on 55 degrees and let it sit for 4 hours. 

10.15pm tonight they should be ready yew!

has anyone else done this before and have some ripper recipes?

Cooking question

Caught a fish today...yay!!
Dhue in 12 m water about a stones throw from our front door. Only about 6 kg, but a big suprise when trying for skippy.
Would like to cook it whole over the barbie to feed 12 tomorrow. Am I making a mistake here and need to slab it?? Have cooked a range of fish this way (pretty impressive in the middle of the table), but never Dhue. Any info would be great - before the knife comes out.

any tips on smoking herring.
I like fish but don't realy like the taste of bbq herring. My fishing mate likes them and we always stop at Parmelia bank on the way in and get a dozen.  Love the idea of smoking them but need info on how too.

Pink Salmon Fillets

Ok guys,

Wife gets home at 10pm tonight from a hard hard day at work while i sat on my ass at home and did jack diddly squat all day due to the weather sucking....

So I wanna make her dinner for her so i can give it to her when she gets home...

Of course i wanna feed myself and I got these salmon fillets I wanna use... nothing flash, just a couple of thick steaks however.. I dont wanna piss fart around with hard shit.. I just wanna quick effective way to cook em up the best I can with the best taste for em...

Thinking of serving on a bed of rice with some vegies too but yeah.. any ideas on a quick efficient easy way to cook these up with some great flavour would rock... and im not too stupid... i just got limited experience at cooking fish so.. if you can point me to some stuff to add in the fry pan to make it lush or any other ways... it would be much appreciated!

and thinking about buyin a new alvey 500b surf reel for 30 bucks a good deal? my dad yhas an old 30 yr old Alvey 'Estuary Champion 600 A5' reel and i dont want to ruin it when i go out


5 Star Seafood Recipes

PRAWN COCKTAIL

Ingredient Required Recipe
large Tiger Prawns 3
1 large Potato 50 g
1 medium Tomato 50
1 Cos Lettuce 30
Mayonnaise 50 ml
Tomato Ketchup 10 ml
Worcestershire Sauce 5 ml
Tabasco Sauce 5 ml
Brandy 5 ml
1 Lime 30 g
1 bunch Parsley 5 g
Salt To taste
Pepper To taste

Equipment

Medium sized pot (5lt), Small sized pot (2lt), 2 Mixing bowls (2lt), Chef’s Knife, Chopping board, Small whisk, Small containers for ingredients (8), Kitchen tongs, Table spoons (5)

Instruction
1. Fill the pot with salted water and bring to the boil.
2. Blanch the tomato for 10 seconds in the boiling water and refresh immediately in ice water.
3. Cook the prawns for 5 minutes in the same boiling water, remove and refresh in ice cold water immediately.
4. Peel and devein the cooked prawns leaving the tail section intact. Chop one of the prawns into a small dice. Place in the refrigerator.
5. Peel the potato and cut into small dice, cook the diced potato in boiling water until tender, and refresh in ice water. Place in the refrigerator.

6. Peel the blanched tomato, cut into quarters, remove the seeds and chop into small dice. Place in the refrigerator.
7. To make the cocktail sauce, mix the mayonnaise, tomato ketchup, Worcestershire sauce, brandy and Tabasco sauce in a small bowl and season to taste. Place in the refrigerator.
8. Wash the lettuce, and select the best leaves. Place in the refrigerator. Cut the lime into wedges, and finely chop the parsley.

How to assemble the dish

1. Remove all ingredients from the refrigerator
2. Place the lettuce leaves in the centre of the plate.
3. In a mixing bowl, place the potato, tomato, chopped prawns, chopped parsley and enough cocktail sauce to bind the ingredients. Place this mixture on top of the lettuce.
4. Place the remaining two tiger prawns on top of the above mixture.
5. Drizzle the cocktail sauce around the edge of the plate and garnish with a lime wedge.
6. Serve immediately.
